Delve into the world of French cuisine with veggies as the star of the show! Don’t worry: the inspiration for this dish may have come from a movie, but our recipe is so easy, you won’t need to channel Remy in your chef’s hat to pull it off. Serve your ratatouille with pasta or rice; over a chicken breast or steak; topped with fried eggs; or added to loaded baked potatoes or stuffed peppers.

  1. Dice eggplant, pepper, and zucchini. 
  2. Heat oil in Sauté Pan over medium heat. Stir in diced veggies, seasoning, and diced tomatoes.
  3. Cover and simmer 12 min, or until vegetables are tender, stirring halfway. 
Tips

For a more elevated presentation, slice veggies with 4-in-1 Mandoline and arrange in casserole dish. Roast in preheated 375˚ F oven for 35 min, instead of cooking in pan. 

Perfectly Balance Your Plate

Serve with 4 oz (113 g) lean protein, and a small bun or 12 cup cooked grains.
